Lightbulb Help a New Housewife! Cooking ?
Help! My husband gets up to go to work (night shift) in about three hours. I'm trying to make him a special meal, but am confused about the yeast from my Dinner Roll recipe. It calls for 1 package of yeast. I bought yeast (instant?) in bulk-so I don't know what the standard yeast package size is. Any ideas? I'd really like to make these for him.

Also, anybody know of a good source to find meal recipes for two or for pre-freezable meals? Thanks!

A little packet contains approximately 2 teaspoons of yeast.

I love to cook-
I really like "Taste of Home" magazine, no commercials and really tasty home cooking type recipes. They have a regular feature with recipes for two or one. They have two related mags I like also, Quick Cooking and Light & Tasty. Quick Cooking has a section with freezer recipes.
I realize she's controversial but www.marthastewart.com has some really wonderful recipes and many of them are not at all complicated.

Cool Thank you everyone!
I appreciate all of your advice. I'll be checking everything out for this evening's meal. I really needed some ideas and was wanting to start a cookbook with all of my favorite recipes in it. This should really be a big help.

Unfortunately, last night, my rolls turned out awful. Well, maybe not that terrible.....the dog loved them! The recipe wasn't very clear, so I'll just blame it on that so I don't feel too bad.

My husband was just tickled that I tried so hard. I'm trying to fatten him up. He works both a day and a night job because he wants to save to start his own business, so I try to feed him as well as possible. The only thing is it looks like the fella never eats!

Sorry about your rolls, but if you never mess up then you'll never become good at knowing instinctually what works and doesn't work.

I agree with Hhhyyyddd, Martha Stewart rocks my world.

If you are in the market for cookbooks, let me recommend Nigella Lawson's "How To Eat". It is packed full of recipes, and has a few chapters on just basics....things that most cookbooks assume you know, but many people don't. Stocks, basic sauces, how to roast and cook every type of meat, etc. I don't usually want to be anyone else but me, but I'd seriously consider it if I could be Nigella. She is just beyond fabulous, I love her. I can sit and read her cookbooks/columns even if I'm not cooking a thing...she's a joy to read.

From "How To Eat":

“Cooking is not about just joining the dots, following one recipe slavishly and then moving on to the next. It’s about developing an understanding of food, a sense of assurance in the kitchen, about the simple desire to make yourself something to eat. And in cooking, as in writing, you must please yourself to please others. Strangely it can take enormous confidence to trust your own palate, follow your own instincts. Without habit, which itself is just trial and error, this can be harder than following the most elaborate of recipes. But it’s what works, what’s important.”

Mandy, are you keeping your yeast in the fridge? It will last longer if you do, just a little tip.

Here is a good roll recipe:

30 minute rolls

2 pkg yeast (4 tsp)
1/4 C sugar
3 C flour
1 1/4 tsp salt
1 egg

Combine all dry ingredients. Melt butter in warm water and add to dry mixture. Add egg. Stir with big spoon. Put in greased muffin pan. Let rise till double (about 30 min.) Bake at 350 for 25-30 min.

Note: when combining the dry ingredients, stir it first before adding the wet; to make sure the yeast will get into the whole batter. I also rub butter on the tops of the rolls as they come out of the oven, looks nicer.

I also have a really good crescent roll recipe if wanted!
