For my son:

Fudgy Rocky Road Bars

8 (or more as needed) graham crackers
1/2 cup natural almonds, toasted and coarsely chopped (I use already roasted, lightly salted)
1 cup of marshmallow topping
1 bag (12 oz) semisweet chocolate chips (I use milk chocolate chips)
1 can (14 oz.) condensed milk

Preheat oven to 375. Line bottom of 9X13 baking dish with whole graham crackers, breaking them to fit if necessary. Bake until crackers are lightly toasted, about 8 minutes. Sprinkle with almonds and large dollops of marshmallow topping.

In heatproof bowl set over (not it) a pan of simmering water, combine chocolate chips and condensed milk. Cook, stirring occasionally, until chocolate melts and mixture is smooth. Pour chocolate mixture over marshmallow topping; working quickly, swirl together with a thin-bladed knife. Refrigerate until set, about 1 hour. Cut into squares. (Refrigerate, tightly wrapped in plastic, up to 2 days.)

Easy almost no-bake with ingredients we usually have on hand.

I made Southern Banana Pudding for us,and had plenty of "nanas" leftover,so went ahead and made a Bananas Foster Cheesecake for a couple we know(dear friends) who love love love my cheesecakes.
