"Fat ass" potatoes and scrambled eggs. Tri-color potatoes with heavy cream, lots of fresh rosemary, blue cheese baked to bubbly perfection.

Polenta made with cream. Roasted grape tomatoes with whole cloves of garlic. Poached eggs. We will layer them into a single bowl of creamy goodness.

I made too much polenta yesterday so I will be pan frying slices and drizzling with balsamic reduction. Probably making a 3 cheese ( shaved Parmesan, Romano, and Asiago) Frico egg to go with it. Crispy crispy.

Once the hubster gets up we will be having baked eggs with sauteed garlicky baby bellas, wilted spinach and a trio of hard Italian cheeses. Not sure what I will rustle up for soldiers. Might throw a loaf of bread in the oven and stall for time.


ETA: threw together a loaf of beer bread (with Guinness!) from a mix to toast for soldiers.

Hubby wanted polenta yesterday so we had that instead of potatoes. I roasted my tomatoes with garlic rather than blistering them in a pan as I intended to do.


Today I am making spicy roasted potatoes topped with veggie sausage gravy and a side of scrambled eggs.

Please, what are your tips to cooking/seasoning good polenta? I try to make different 'out of my normal range' type foods but polenta is one I struggle with. My "Little" is a great eater so I want keep expanding her palette and explore new things. At the moment she is loving couscous with a variety of seasoning.

I make mine using heavy cream for half of the liquid called for, even though it is creamy on its own. I like the flavor and mouth feel of it that way. My only tip is to start stirring the second you start adding in the (instant) polenta and to add it slowly. It comes together really quick and easy.

It's really a blank canvas. You can jazz it up how ever you like. A little S&P and some cheese. Fresh rosemary and some sort of Italian cheese. I almost always use it as a base for other items with lots of flavor so I don't add much to mine as a base. If it was standing alone, I would add my own dry ranch dressing seasoning mix and some grated sharp cheddar. If you have left overs, store it flat so you can easily fry it. It's SO good fried with a balsamic glaze drizzle.

Probably going to jazz up some boxed pumpkin bread mix, jazz up some cream cheese to slather on it. Most likely going with a cinnamon swirl and streusel topping for the bread and lightly sweetened cream cheese with crushed pecans. Make some scrambled eggs with fresh chives to go with it.
