Please, what are your tips to cooking/seasoning good polenta? I try to make different 'out of my normal range' type foods but polenta is one I struggle with. Thank you, the poached gods seem to smile upon me, even though I just slide them into the pan rather than making a vortex in the water.



Lacking inspiration and cream. My buttermilk is out of date or I would make cornmeal pancakes. Default rosemary potatoes and scrambled eggs with fresh chives.

I still don't have any buttermilk, I am going to sour some regular milk and make cornmeal pancakes. Probably going for savory with herbs and onions and will serve with some kind of egg on the side.
