It turned out to be a happy Submarine-Hoagie-Hero-Grinder-Day! I got a coupon for a free 6" MTO next time I visit Sheetz... yay!

Good for you! We don't have that store around here.

Today I need a mental health day but expect to return to my normal self tomorrow.
Some angel food cake might help.

I think we could all use a mental health day.

Angel food cake is okay, but it doesn't have a lot of flavor to me. I guess it's too healthy of a cake.

I get to see my physician in a few days so maybe eating something healthy is good.

I have to have blood tests at the end of the month, so I may try to eat healthier around that time.

I have toured Fort Pulaski in Savannah.

Today is also "It's My Party Day". I better get going on making the refreshments. Let's get this party started!

Coming out really doesn't apply to me, but I hope that anyone who is coming out has an easy time of it.

I like pumpkin.

Today is National Gumbo Day. I've had fried okra and okra in soup, but never actually had official gumbo.

Today is also National Frustration Day. I seem to celebrate that every day.

I agree that gumbo would be a good alternative to pumpkin pie.
From what I've read okra is not considered an essential ingredient but is used as a thickening agent. Often, the desired effect can be obtained with a roux.
Items considered the holy trinity for gumbo are onions, celery, and green bell peppers. After that there do not seem to be any absolutes.
Rather than getting frustrated trying to find the perfect recipe, I suggest getting creative. IMO it is much like making an omelet (anything in the fridge is fair game).
Enjoy!

I thought that gumbo had to have meat in it, and okra in it too. That's what I've always seen on cooking shows or in printed recipes. I guess there are a lot of variations.

I won't get frustrated trying the find the best gumbo recipe for me, but it's very likely that other things will frustrate me today. That's probably the norm for most people, so I'm sure I'm not alone in my frustrations.

Oh, I forgot, it is traditionally served on a bed of rice.
