Besides it being Good Friday, it is also:

Pecan Day http://www.holidayinsights.com/moreh...h/pecanday.htm

Waffle Day http://www.holidayinsights.com/moreh.../waffleday.htm

I think those two go together pretty well!

Good Friday
I am not big on religious holidays but if you've ever said TGIF, this is THE DAY:

THANK GOD IT'S FRIDAY!

I like pecans but question the above link's contention that it is the only nut tree native to America. I'd think others would include butternut, American chestnut, hickory nut, black walnut and beech. Native Americans also had a process for making acorns edible.

It would be nice to have waffles for breakfast more often but I usually do not put forth the effort and rarely eat out at breakfast. Chicken and waffles (Pennsylvania Dutch style) is also a special treat.

Strong to the finish
If mom had these recipes, I might've liked spinach more while growing up:

I am also a retired legal assistant, so I do enjoy that (even if no one is bringing me donuts today).
