Hey all you fantabulous cooks out there!! I'm looking for an awesome tried and true blueberry muffin recipe. I've got a ton of blueberries and I need to do something with them soon! Thanks!

This is a recipe I've used several times. The muffins are a real treat, as they are pretty rich. The recipe comes from a delicatessen called "Zoey's" located in Manchester, Vermont. I usually cut the measurements down by 1/3 (to make 12 muffins) or 2/3's (to make 6) since 18 large muffins would be too much for us to eat. And I think, if I remember correctly, that I use the large or "giant" muffin pans for this recipe.
Zoey's Blueberry Muffins
BEAT TOGETHER:
1 1/2 cups butter
3 1/3 cups sugar
6 eggs
ADD:
6 cups flour
2 T. baking powder
1 1/2 Tsp. salt
1 1/2 cups milk
1 1/2 quarts fresh (or frozen) fruit
Bake at 325F for 30 - 45 minutes
Yield: This recipe serves 18 muffins

THE BEST BLUEBERRY MUFFINS YIELD: 18 REGULAR, OR 10 – 12 LARGE
½ cup butter or margarine, room temp
1 cup granulated sugar (or slightly less if berries are very sweet)
2 large eggs
1 teaspoon vanilla
2 teaspoons baking powder
¼ teaspoon salt
2 ½ cups fresh blueberries or 1 bag (12 oz) frozen, no sugar added, not thawed
2 cups all purpose flour
½ cup milk
Topping:
1 Tablespoon granulated sugar mixed with ¼ teaspoon ground nutmeg
Heat oven to 375 F. Grease or line with paper cups 18 regular size muffin cups (12 if you want large muffins). In a medium bowl beat butter till creamy. Add sugar and beat until pale and fluffy. Add eggs, one at a time, beating after each addition. Beat in vanilla, baking powder and salt.
If using fresh blueberries, mash ½ cup and stir into the batter with a rubber spatula. Fold in ½ the flour, then ½ the milk into the batter. Repeat with the remaining flour and milk. Fold in the remaining fresh blueberries or all of the frozen. Spoon batter into the muffin cups. Sprinkle with topping. Bake 25 to 30 minutes until golden brown and the top feels springy to the touch when pressed lightly.
These are cake-like muffins and sweet. My sister gave me this recipe a long time ago. They will be purple if you use the frozen berries or if you mash some like it says to. They are good!

I have always used the Jiffy mixes LOL
