View Full Version : Creole Skillet Dinner

1 medium onion, chopped
1 clove garlic, finely chopped
1/2 cup chopped green bell pepper
1/2 pound fully cooked kielbasa sausage, cut lengthwise into fourths and sliced
3 large tomatoes, chopped
1 cup chicken broth
1/2 teaspoon salt
1/2 teaspoon Cajun Seasoning
1 1/2 cups uncooked instant rice

Spray a 12 inch nonstick skillet with Pam, heat over medium high heat.

Cover and cook onion, garlic and bell pepper, for 3 to 5 minutes.

Stire in kielbasa, tomatoes, broth, salt and Cajun seasoning. Heat to boiling, stir in rice. Heat again to boiling, then reduce heat to low. Cook 8 to 10 minutes longer or until rice is tender. Fluff with fork before serving.

If desired sprinkle Tabasco sauce on top before serving. BAM!!!!
