Pumpkin Chocolate Chip Cookies

1 & 1/2 cup oil
3 cups sugar
2 eggs beaten
5 cups flour
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons nutmeg *
2 teaspoons cinnamon *
2 teaspoons ginger *
* or i use 6-7 teaspoons of pumpkin pie spice your choice......
1 & 3/4 teaspoon salt
1 29 oz can of pumpkin
2 cups chocolate chips
5 teaspoons vanilla
1 cup walnuts********optional....I dont use nuts :)

Beat oil and sugar in a big mixing bowl, add eggs, beating well, sift flour, baking powder,baking soda,spices, and salt together. Add sugar mixture and pumpkin, beating well,fold in chips,nuts, and vanilla, cook at 350f on a greases cookie sheet, 10 -12 minutes.....cool on rack

Sounds great! I make something similar - pumpkin chocolate chip muffins - but I've never thought of trying a cookie! My son is not a vegetable eater, so this is actually a good way to get a serving of orange veggies in him (you can use canned squash too).
