I just got this in one of my emails today and thought it was a great idea for gifts so wanted to pass it along for any who have not seen it:

2 tsp. powdered vanilla
1/2 C. chopped pecans
3 C. all-purpose flour

1 T. cinnamon
1/4 tsp. nutmeg
Combine and blend ingredients in a small bowl. Store in an airtight container.
Attach these instructions to the jar:

Carrot Cake Mix

3 large eggs
3 C. grated carrots
1 (8 oz.) can crushed pineapple

Cool the cake and frost if desired or dust with confectioners' sugar. :yum: :yum: :yum:
